What is forcemeat? Think sausage, pate, mousse, meatloaf. You grind up some meat, add fat (30-70%), something to bind it together (like eggs, cream, breadcrumbs), some spices, maybe a garnish ( apple, cranberries, nuts in the pieces), then you shape it, cook it, slice it and serve it up. Grilling Round Things is Fun!
Love this grilled portobello with avacado, leek, artichoke and goat cheese stuffing with breaad crumbs and walnuts! Great next to a lovely medium rare steak.
