In a book that touts itself as being “enlightened,” I came upon a nice recipe…..for swordfish.
Now, I don’t know if I can call myself enlightened or not, but I DO know that swordfish costs about….wait for it….$2.50 an OUNCE. This recipe, with mango, red and green peppers and fresh coriander, would cost $65.00 to feed three or four people!
I have some giant beets I bought fresh, so I cut the greens off of them. Steam the greens; I don’t wanna mess with the beets right now.
I have a leftover baked potato in the fridge, so I cut it into thin slices.
Two whitefish filets…(bought on sale, of course). I dredge them in a little bit of low-fat milk, then flour them. In a very small amount of hot oil, I fry them up and sprinkle with dried thyme, salt and pepper. Undercook them a little, and put them in a 250 degree oven to finish.
Add a little white wine (I have my three dollar bottle) or water to the pan, to get all the goodies off the bottom. Let it cook down some to get the alcohol cooked off, add a little bit of margarine. Now sauté the potato slices till browned on both sides. (Bet you thought you were making a SAUCE.)
Remove the potatoes, mix about a teaspoon of cornstarch with a quarter cup cold milk, mix it into your fry pan.
(YEP..the sauce…sneaked up on you!)
Bring it to a boil. Salt and pepper to taste.
Serve the fish (one per person is enough), along side the potato slices and the beet greens. Pour your sauce over the fish and potato, toss a little garnish on it…like chopped parsley if you have it, dried thyme and/or dill, grated carrot…for color. Lovely little dinner for….
$1.70 per person!
