Catfish, Hardheads and Hurricanes

Escape to the Bay for Windy Cooking

Sitting on the bay, watching the Gulf waving in and out, Laughing Gulls, Pelicans and Great Blue Herons soaring overhead playing with the wind gusts and breezes, I'm wondering how on earth I'm going to cook dinner with no electric or gas burners, no firepit, and 30 mile an hour wind gusts.  It's going to be a charcoal thing, but keeping them lit until they're hot might be a trick. Too Much Catfish? Never!

After having had some success catching the catfish (20", 23", 17", etc.), the two of us find ourselves inundated with fillets and without the proper equipment to freeze it.  So it's catfish crazy for a couple of days.
